Christmas Sweet Treats

Maddie Hedrick

As Christmas comes around the corner, it is time to start thinking about what desserts you can bring to the event. Whether you gather together with friends or family. Making deserts around the holidays is always a trick. So here are a few famous holiday treats that you can try with your friends and family.

Peppermint Meltaways:

Ingredients

  • 1 cup butter, softened

  • ½ cup confectioners sugar

  • ½ teaspoon peppermint extract

  • 1-¼ cup all-purpose flour

  • ½ cup cornstarch

  • 2 tablespoons butter softened

  • 2 tablespoons 2% milk

  • ¼ teaspoons peppermint extract

  • 2-3 drop of red food coloring (optional)

  • 1-½ cups of confectioners sugar

  • ½ cup crushed peppermint candies

  • In a small bowl, mix softened butter and confectioners' sugar until light and fluffy, 3-4 minutes. Beat in extract. In another bowl, whisk flour and cornstarch; gradually beat into creamed mixture. Refrigerate, covered, for 30 minutes or until firm enough to handle

  • Preheat the oven to 350°. Shape dough into 1-inch. balls; place 2 inch apart on ungreased baking sheets. Bake for 9-11 minutes or until bottoms are light brown. Remove from pans to wire racks to cool completely.

  • In a small bowl, beat butter until creamy. Beat in milk, extract, and, if desired, food coloring. Gradually beat in confectioners' sugar until smooth. Spread over cookies; sprinkle with crushed candies. Store in an airtight container

Rolo Reindeer Desserts:

Ingredients

  • Bag of Rolos

  • Bag of pretzels

  • Red candy - m&m,red hots etc

  • Candy eyes

  • Place 20 full pretzels on a baking sheet. Then cut the remaining pretzels in half for the antlers. I found it worked best to just be gentle and use a sharp knife

  • Add the unwrapped Rolos on top of the pretzels

  • Place the Rolos on top of the pretzels and bake at 250°F for a few minutes until softened.

  • Add your eyes, nose, and antlers to the reindeer when the Rolo’s is still warm. It's important to work fast, so the chocolate doesn't harden up.

Gingersnap Cookies:

Ingredients

  • ⅓ cup cinnamon sugar

  • 2 cups sifted all-purpose flour

  • 1 tablespoon ground ginger

  • 2 teaspoons baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

  • ¾ cup shortening or butter

  • 1 cup white sugar

  • 1 large egg

  • ¼ cup dark molasses

  • Preheat the oven to 350 degrees F. Place cinnamon sugar in a bowl; set aside.

  • Sift flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture until blended, then sift a second time into another bowl.

  • Beat shortening in a large bowl with an electric mixer until creamy. Gradually beat in white sugar. Add egg and molasses and beat until light and fluffy.

  • Sift 1/3 of the flour mixture into the shortening mixture; stir to thoroughly blend. Sift in the remaining flour mixture and mix together until a soft dough forms.

  • Pinch off small amounts of dough and roll them with your hands into 1-inch-diameter balls. Place balls in cinnamon sugar and roll to coat, then place 2-inches apart on ungreased baking sheets.

  • Bake in the preheated oven until the tops are rounded and slightly cracked, about 10 minutes, switching racks halfway through. Cool cookies on a wire rack.

Cheesecake Bites:

Ingredients

  • Cream Cheese

  • Graham Crackers

  • Unsalted Butter

  • Regular Granulated sugar

  • Vanilla

  • Large eggs

  • Mix the ground-up graham crackers, melted butter and sugar together in a small bowl. Next you add the graham crackers crumbs to the lined muffin tins and gently press the graham crackers down. Once you have done this, you bake it for a few minutes.

  • While the graham crackers are baking, you can begin whipping together the cheesecake filling. You only need sour cream, vanilla, cream cheese, and sugar for this part.

  • Once the graham crackers have baked for a few minutes in the oven, remove them to cool. When they are cool, grab a tablespoon and fill the mini muffin tin with the cheesecake batter.

  • Refrigerate for at least a few hours
